In contrast to last Friday’s kicking ass and taking names post, the latter half of this week has been kinda rough. Every time I think “hey, I’m starting to feel better,” a new symptom crops up. Last night it was a migraine – thankfully some meds helped, but I didn’t sleep well at all, then Matt got a call from work at 3am, then Hannah was up at 5am… I dunno. Just an “off” couple of days. We did manage some grocery shopping this morning, but I didn’t do nearly as well with finding deals. Plus #momfail someone was super tired and cranky. Attempting to placate her with a banana and a pouch through Meijer left us both covered in mushed banana. She’s honestly a dream baby 99% of the time, so I feel bad feeling frustrated and, selfishly, pushing through the majority of our shopping. But we’re home now and she’s napping, so I can veg for a bit and blog!
Thursday (day 9):
For breakfast I had a roasted sweet potato topped with almond butter, coconut oil, flax/chia/coconut, and cinnamon, along with spicy pickles and two hard-boiled eggs.
Lunch was a snack plate of sorts: tuna and spicy guac, veggies for scooping, a fig/walnut disc, and kombucha.
Dinner was extra yummy. I sauteed ground beef and simmered it with a compliant marinara sauce, to which I added nutritional yeast, red peppers and spinach. Served over zoodles. As a bonus, we still have half of the leftover sauce for a future “quick dinner” option.
Shortly after dinner I figured out that I definitely didn’t have enough fat on my plate, because I was hungry! So I made a bowl of coconut milk, sliced banana, almond butter, cinnamon and walnuts warmed up. So, so good.
And I apparently still didn’t eat enough, because while watching TV I had a Larabar and 2 hard-boiled eggs whites. No picture. Then the headache came with a vengeance and we headed to bed.
Friday (day 10):
My day started with cold brew and coconut milk, and an RX bar while unloading groceries and running the dishwasher after grocery shopping.
I don’t know what I’ll have for lunch. Whatever I can find in our super cleaned out compliant pantry!
Here’s our grocery haul – I’d say I’m 90% through the shopping list. We have tons of proteins and veggies in the freezer, so I’m trying to incorporate those into next week’s meals. (Coconut milk, iced tea, chai tea, Sunbutter and almond butter, RX bars, lemon juice, blueberries, bananas, lunchmeat, bacon, pork shoulder, sweet potatoes, cilantro, broccoli slaw, cauliflower, tomatillos, coconut and almond flours (bulk) and flaked coconut)
For dinner tonight, we’re going to have beef with broccoli from The Castaway Kitchen. Last night I worked on a meal plan for this weekend and next week. We’re having:
- Saturday breakfast: asparagus and eggs Benedict
- Saturday dinner: Shepherd’s pie
- Sunday breakfast: breakfast casserole (planning to portion the rest for breakfasts next week)
- Sunday dinner: copycat Chick-fil-A nuggets
- Monday dinner: chicken pot pie soup
- Tuesday dinner: Crock-Pot Mississippi roast
- Wednesday dinner: Instant Pot carnitas
- Thursday dinner: leftovers
- Friday dinner: fish taco bowls
Here’s hoping I can shake this funk soon! I’m sure it doesn’t help that we’re supposed to get another winter storm this weekend. Yes, halfway through April. Yay, Michigan! So I’ll leave you with the following quote; I think many of us can probably relate.
